what open-world games are you playing to survive the wait?

I've been poking around my library trying to find something that scratches the itch without feeling like a step backwards. Replayed GTA V a bit, but the physics feel kind of rigid now, especially the way cars handle. Might just be me overthinking it after watching the trailer too many times.
RDR2 is the obvious pick, and I still love how reactive the world is. The way NPCs remember you, the animal behaviors, the little physics quirks. I spent an hour last night just seeing how far I could launch myself off a cliff with a horse. But I've put so many hours into it that I'm starting to notice the seams, if that makes sense.
I'm curious if anyone's found something with really satisfying edge-case mechanics. Not full-on glitch hunting, just those moments where the systems collide in unexpected ways. Like, I remember Watch Dogs Legion had that play-as-anyone thing, and sometimes the procedural generation would spit out some truly bizarre character combos. Does that still hold up? Or maybe something like Just Cause for the sheer physics chaos, though the world feels a bit empty.
I guess I'm looking for a game where the world pushes back in interesting ways. Where the AI doesn't just follow a script but actually reacts to the dumb stuff I do. The trailer makes it seem like Leonida might have that kind of density. Could be wrong, but I'm hoping.
